Sweet Potato Casserole

3 lbs sweet potatoes chopped

2 eggs

1 tbsp vanilla

1/2 cup milk

3 tbsp butter

1 cup pecan pieces

1/3 cup pure maple syrup

Boil sweet potatoes until tender and drain water. Mix soft sweet potatoes, eggs, vanilla, milk and butter with a hand mixer or in a KitchenAid mixer. Pour mixture into rectangle dish. Mix pecans and syrup and sprinkle on top of sweet potato mixture. Cover with foil and bake at 350 degrees for 35-45 minutes.
