SEAFOOD CHOWDER
Recipe:
2 lbs. wild caught cod
1/2 lb. raw shrimp
1/2 lb. raw bay scallops
25 oz. baby red or yellow potatoes chopped
1 large white onion chopped
15 oz. can diced tomatoes
15 oz. can tomato sauce
1 tbsp. grapeseed oil
1 tbsp. minced garlic
16 oz. chicken broth
4 oz. baby spinach
Red pepper flakes as desired.
Directions:
Sauté onion in grapeseed oil and garlic. Add potatoes, tomatoes, and tomato sauce. Simmer until potatoes are tender. Add chicken broth and bring to light boil. Add cod, shrimp and scallops (or whatever seafood you desire). Simmer for 30 minutes. Sprinkle in red pepper flakes to desired heat. Add spinach and stir.
