CHICKEN & RICE

Recipe:

Onion large onion chopped

4 large carrots chopped

1 tbsp. grapeseed oil

2 packages (about 3 lbs) boneless skinless chicken thighs

2 cups of water

3 cups dry basmati rice

Salt/pepper

Directions:

Cook rice according to package directions. Heat grapeseed oil and fry chopped veggies until soft. In another large pot, cook chicken in the 2 cups water. Once chicken is cooked through, remove and chop but leave water in pot. Add steamed rice, veggies and chopped chicken and stir! Salt and pepper as desired.
