Baked Potato Cauliflower Casserole
2 lbs baby gold potatoes
1 lb riced cauliflower or 1 head of cauliflower
1 cup plain Greek yogurt
1 cup milk
2 tbsp butter
3 oz shredded cheese
6 strips of turkey bacon cooked
Chopped green onion
Chop and boil potatoes and cauliflower in water until soft. With hand mixer, blend in in yogurt, milk and butter. Add 2 oz of cheese and mix with spoon. Pour into casserole dish and top with turkey bacon, remaining cheese and green onion. Bake at 350 for 20-30 min until warm through!
