What is your occupation?

Full Time Student at the University of Dayton studying Early Childhood Education

What is something about yourself that we might not know? 

I have wanted to be a teacher since I was in 1st grade. 

What have you learned through nutrition coaching?

I have learned to give myself grace that not everyday is going to be perfect and not letting those bad days impact my whole week. I have also learned to listen to my body, how it feels, how I am fueling it, and overall how that impacts me both mentally and physically. I have learned so much about nutrition but also about myself and realizing who I am as Nicole. 

What is the biggest thing you’ve changed that has led most to your success?

The biggest thing that has changed is my mindset. This is thinking about food and eating as well as my internal thoughts. Several aspects about this experience have been impacted due to this change in mindset. There is a lot of things you see on social media or at school that really play into self doubt or self criticism. That was one of the hardest things that I dealt with and sometimes still do but how I process and go about things has really changed through this coaching. This new level of confidence impacts everything in my life and has led to my success. 

What advice do you have for someone considering nutrition coaching? 

DO IT! There is never a perfect time for anything but just taking one simple step and meeting with someone can help change your perspective on so many aspect of your life. I am a college student so finding a balance between living this active and healthy lifestyle but then having a social life was challenging. But, with the nutrition coaching I have been able to focus on my values and staying true to myself and finding that balance.

What goals do you have for the rest of 2023 (nutrition related or not)?

I want to continue to stay true to myself as I am entering my senior year of college. I also want to step outside of my comfort zone and push myself to do things that I might not always be good at; this includes learning how to cook more and run a half marathon.
