Veggie Pancakes
1 lb potatoes shredded
5 medium zucchini shredded
1-9 oz bag of shredded carrots
4 large eggs
1/2 cup egg whites
1/4 cup flour (I use rice flour but any option will work)
Salt/pepper to taste
Combine veggies in a large bowl. I usually use a few paper towels to try to dry veggies some. Add the rest of the ingredient hand mix. Heat oil or spray in large fry pan. Drop large spoonfuls into hot pan. Cook for several minutes and then flip and smash down.
This recipe makes 28 pancakes for me and macros are:P- 2 F-1 C-6 for each pancake.
