Broccoli Soup

2 bunches of fresh broccoli (there are 3 stalks in each bunch) chopped for florets
1 onion chopped
4 cups chicken broth
2 tbsp butter
1/4 cup flour (I usually use rice flour)
2 cups milk
2.5 oz shredded cheddar

Directions:
Add chopped broccoli, onion and broth to instant pot. If you don’t have instant pot, you can boil on stove. Set to manual for 10 minutes then quick release steam. ON STOVE, melt butter on medium heat and stir in flour. Add milk slowly while stirring constantly. Simmer while stirring until mixture thickens (about 3-4 minutes). Pour mixture into instant pot with broccoli. I use immersion blender to purée but could also just mash if you prefer. Stir in cheese and serve!
