BROCCOLI SOUFFLÉ
Recipe:
2 lbs. chopped broccoli (I use 2 of the 4 bags in the Costco frozen pack!)
1 onion chopped
2 tbsp. butter
4 oz. fresh shredded cheddar
3 eggs
1 cup egg whites
Salt/pepper
Directions:
Preheat oven to 375. Sauté onion in butter until soft. Melt in cheese. Lay broccoli in dish and mix cheese/onion mixture throughout. Beat eggs and whites together and pour over broccoli. Cover and bake for 30-45 minutes (depending on dish size).
