EGG CASSEROLE
Recipe:
1 lb. ground turkey sausage
1 red bell pepper chopped
1 onion chopped
1 small package of mushrooms
2.5 oz. baby spinach
6 eggs
1 cup egg whites
Optional- 2 oz. cheese of choice (I use cheddar)
Directions:
Preheat oven to 350 degrees. Brown turkey sausage on stove and add all veggies except spinach. Cook until turkey sausage is browned and veggies are soft. Pour sausage/veggie mixture on bottom of rectangle pan. Layer raw spinach on top. Beat eggs and egg whites together and pour on top of spinach. Sprinkle shredded cheese on top if desired. Cook for 30 minutes or until eggs are cooked throughout.
