TURKEY MEATLOAF
Recipe:
3 lbs ground turkey
2 large onions
2 tbsp. olive oil
1/2 tsp dried thyme
1/4 cup Worcestershire
1/2 cup chicken stock
1 tsp tomato paste
1 cup old fashioned oats
2 large eggs beaten
Salt/pepper
1/2 cup ketchup
1. Heat oven to 325 degrees.
2. In sauté pan, cook onions, olive oil and thyme until onions translucent. Add the Worcestershire, chicken stock, and tomato paste and mix well. Allow to cool.
3. Combine turkey, oats, salt/pepper, and onion mixture in a large bowl. Mix well and shape into a rectangular loaf on an ungreased sheet pan. Spread ketchup evenly on top. Bake for 1.5 hours or until meatloaf is cooked through. A pan of hot water in the oven will keep the top from cracking!
